After I was done I couldn’t have been more surprised how easy there were to make. In my head I thought scones were quite challenging, especially with gluten free flour. What a relief! This version has some lovely mixed spices in it, so you get the perfect Christmas scones. The fruit compote is literally the icing on the cake and makes them extra yum. When I was talking to my mum on Skype the other day we made plans and since I’m flying to Germany next week, I will make these Christmas scones for my whole family. gluten free christmas scones So without further ado, here’s the recipe. Have fun baking! gluten free christmas scones Method: 1. Preheat the oven to gas 7, 220 degrees C, fan 200 degrees C. Line a baking tray with baking paper. Sift the flour, baking powder, xanthan gum and spices into a bowl. Rub in the spread until the mixture resembles breadcrumbs, then add the sugar and orange zest. 2. Gradually mix in the milk to make a soft dough, then turn out onto a floured work surface. Knead gently until smooth, then roll out to about 2.5cm thick. Use a star-shaped cutter to stamp out stars, re-rolling as necessary. 3. Use a knife to lightly score the tops of the scones to make a criss-cross pattern. Arrange them on a baking tray, brush the tops with egg and bake for 25 mins or until lightly golden. Leave to cool on the tray. 4. In a saucepan, mix the cornflour into the fruit mix, then heat gently, stirring, until it starts to simmer and thicken. Simmer gently for 1 min, then remove from the heat. Stir in sugar to taste, then leave to cool. Transfer to a serving dish; chill until ready to serve. 5. Arrange the stars around the compote. Dust the yogurt with mixed spice and serve in a dish on the side.
